A COLONIAL TIMES GOURMET CENTER

The Fonda del Siglo XVII has done an extensive research on gourmet food, rather than popular food in colonial Antigua.

The information obtained comes from family recipes passed on as orally tradition. These formulas have been tried thousand of times, since all the ingredients were measured in different ways as it is used now. Furthermore, all the dishes were not easy elaborated and with many days of process, some of them are included in our menu.

During this time, a lot of meat was cooked except in Easter time. They used to cook it during many hours, usually by native cook, as Spanish women and creoles thought it was not an activity for them. For this reason, different elements from three colonial gastronomy cultures were assembled: Spanish baking, native and black people cooking. They combined beef with pork and poultry, sugar and spice, banana, corn, chili pepper, potatoes and fruits as papaya and pineapple.

Regarding desserts, most of them came from convents as nuns experienced and enjoyed cooking.

Bread with extra virgin olive oil, tomato and aromatic herbs.

1. JAGUAR Eye.
A delicious drink on the rocks, elaborated with juicy oranges, fresh apples, wine and lemon. Decorated with fruit slices.

Main Courses
2. False meat
Ground calf meat, spices, tomato, onion, cooked in dry corn leaves. Served with sauce, or
3. Stripped meat
Cattle meat with sausage, tomato, onion, garlic, olives, wine and capers cooked with spices.

4. Dry soup
Rice, vegetables, tomato, onion, garlic, boiled egg and spices, served on a tortilla.

5.Escabeche.
Vegetables like cauliflower, green beans, carrot, chili pepper in extra virgin olive oil and apple vinegar with thyme and laurel leaves. Served over a banana leaf

Dessert
6. Twisted bread
Delicious bread, made with dark sugar, cinnamon and raisins, or
7. Rice Quesadilla. (Gluten free)
A delicious dessert made with rice powder, butter and eggs. Decorated with Guatemalan hard honey balls candies and a masapán- orange flowers dressing.
